First you need to beat 1 egg with sugar, vanilla and a pinch of salt until it increases in volume. Add milk and butter at room temperature. Mix on low speed mixer until combined. Next, sift the flour with the baking powder and mix at low speed until smooth.

Transfer the dough to a piping bag, place on parchment (silicone mat) cookies with a diameter of about 3 cm. Higher ones so that they do not flatten during baking. Bake for 10-15 minutes in a preheated oven at 180°C. Cookies should remain light and soft, do not overdry them. Remove from oven and cool.

For the filling, gelatin (5 g) must be poured with cold water (30 ml) and allowed to swell. Melt the gelatin in pulses in the microwave.

In a saucepan with a thick bottom, mix sugar (110 g), water (30 ml) and put the syrup on medium heat and, stirring, wait for it to boil. Then reduce the fire to a minimum and boil the syrup for a couple of minutes. While the syrup is simmering, start beating the gelatin on low speed. Beat on high speed until soft peaks. Quickly transfer the mixture to a pastry bag and pipe onto the cookies.

Top with the second half. Send our "choco-pies" to the refrigerator for 30-40 minutes. Chilled "choco-pies" decorate and serve!
