Mingrelian kharcho - beef in a spicy thick nut sauce with tomatoes and fragrant Georgian spices. The dish turns out thick and rich. Traditionally, it is not eaten with spoons, but is soaked in gomi corn tortillas or bread. An authentic Megrelian version of kharcho is made from fatty brisket. For a more lean dish, you can take a tenderloin. Mingrelian kharcho looks very attractive - golden color, appetizing aroma, toasted pieces of meat. Ingredients: Beef, Onion, Tomato, Garlic, Chili pepper, Walnuts, Cilantro, Butter, Olive oil, Water, Wheat flour, Salt, Seasoning for kharcho "SPICESGEORGIA"
Cooking method:
Rinse beef, cut into small pieces. In a frying pan, heat olive oil (you can replace any vegetable oil), put the meat and fry over medium heat until the beef releases juice.
Peel the onion, chop it, send it to the meat, fry the onion until transparent.
Peel the garlic, chop, send to the pan.
Remove the skin from the tomatoes, cut into cubes. Rinse greens, dry, finely chop. As soon as the garlic releases the aroma, send the tomatoes and greens to the meat. Then pour in 100 ml of boiled water, reduce the heat to a minimum and simmer under a closed lid for 30 minutes.
Add ground walnuts, SPICESGEORGIA seasoning for kharcho, chili pepper and salt to taste. To stir thoroughly. Simmer for 10 minutes.
Add flour, mix thoroughly and quickly. The dish is ready!
