Cottage cheese mannik with berries

Ingredients: berries, cottage cheese, semolina, sour cream, sugar, eggs, baking powder, salt, vanillin

Cooking method:

❗All ingredients should be at room temperature ❗ Put cottage cheese in a suitable bowl, add half (90 g) of sugar, sour cream, 3 egg yolks and vanillin. Blend everything with an immersion blender until smooth. Pour semolina and baking powder dough.

Stir so that all the ingredients are evenly distributed over the dough. Leave for 15-20 minutes at room temperature so that the semolina swells. We send 3 egg whites to a clean, dry and fat-free dish. Beat with a mixer at medium speed until a white foam appears. Then, adding the remaining sugar, beat until the sugar is completely dissolved and the meringue is stable.

In portions, transfer the meringue to the bowl with the dough. Gently fold egg whites into batter to keep volume and fluffiness. We take a suitable baking dish (I have 28 × 8 × 7), the bottom and walls of which are covered with a piece of parchment paper. We spread part of the dough in the form, leveling it with a spoon or spatula.

Put some berries on top (frozen ones do not need to be thawed). We cover with another part of the dough, alternating it with berries. Thus, we fill the entire form with dough and fillers. We put the form in a preheated oven. We bake mannik for about 1 hour at 180 ° at an average level. Readiness is checked with a wooden skewer or toothpick. We take out the form with curd manna, let it rest for 5 minutes, and then take it out, holding the paper.

We shift our appetizing curd mannik to a dish. It can be served either warm or completely chilled.

Cottage cheese mannik with berries turns out to be very tender and quite juicy (precisely due to the addition of cottage cheese to the dough), moderately sweet, does not crumble much.
