Ingredients: Wheat flour, Water, Minced meat (beef + tail fat), Garlic, Onion, Ground pepper mixture, Hot chili pepper, Cilantro, Salt

Cooking method:

We put 500 grams of sifted wheat flour in a large bowl and make a recess in the flour, then pour 230 milliliters of cold into the bowl in a thin stream boiled water with 1 teaspoon of salt added to it and constantly stirring, knead a stiff dough, which then continue to knead in a bowl with your hands 15 minutes. We spread the dough from the bowl on the table and knead it thoroughly for another 7 minutes, then put the dough in a bag and put it in the freezer for 30 minutes.

We spread 500 grams of minced beef meat with fat tail fat in a bowl, then add 1 clove of garlic grated on a fine grater, grated on a coarse grater 1 head of onion, 1/3 teaspoon of hot pepper, 1 teaspoon of a mixture of ground peppers and mix everything Ingredients. Cut 50 grams of cilantro, then add it to the bowl with minced meat and mix all the ingredients well. Pour 500 milliliters of cold boiled water into a bowl with minced meat and mix well.

After 30 minutes, we take the dough out of the refrigerator and put it on the table, then we form it and divide it into 19 identical pieces weighing 40 grams, after which, alternately and without much effort, roll out each piece of dough to 2 millimeter cakes thick. We spread the cake on a small plate, after which we put 1 tablespoon of minced meat on it.

We collect the dough around the filling in folds, making 17-18 sets and releasing air, we form khinkali. Pour the required amount of water into a saucepan put on the stove and bring it to a boil over high heat, then spread khinkali in a saucepan and once again bring the water to a boil, then cook the khinkali until tender for 7 minutes and put them on a plate.
