Ingredients: large eggplant, olive oil, honey, lemon juice, garlic, onion, ginger, cumin, cinnamon, harissa, parsley, salt, pepper, medium red orange

If something is missing, just omit or replace with a similar one.
Stages of preparation. 1 Wash the eggplant, cut off the ends and cut into finger-thick slices. Drain in a colander, sprinkle generously with salt and let drain 10 minutes. 2 Mix all sauce ingredients together and season with salt and pepper.
3 Dry the eggplant slices with paper towels. Heat half the olive oil in a frying pan and fry the eggplant slices for 3-4 minutes on each side. Remove from skillet and set aside. 4 Peel and finely chop the onion and garlic. Clean and grate the ginger. Fry everything in the remaining oil in the same pan for about 1 minute. Add spices and simmer for 1 minute.
5 Wash the oranges, cut in half (if you don't want, it doesn't matter) after the eggplants are fried, take them out on a prepared plate and fry the orange halves in the same oil.
6 Put the eggplant back into the pot and mix everything together with honey, lemon juice and parsley. Season with salt and pepper and serve with yoghurt sauce.
