I make pumpkin soup according to different recipes. I add certain components according to my mood. This option is one of my favorites. I cook in chicken broth and before serving a few slices of fried bacon or raw smoked sausage. It adds a wonderful smoky flavor to our soup. Ingredients: Pumpkin, Cream 10%, Chicken broth, Bacon or smoked sausage, Onion, Salt, spices, herbs, pumpkin seeds, sun-dried tomatoes
Cooking method:
Wash the pumpkin, chop it into pieces and separate the pulp. Cut into small pieces. If the skin is very hard, you can pre-bake the pumpkin in large chunks in the oven. Pour some water into the bottom of the mold. Soft pumpkin is easy to remove from the skin.
At the bottom of the pan, fry the chopped onion in a small amount of vegetable (butter). Add pumpkin and pour over chicken broth. Salt, pepper and add spices. I love thyme. You can add more or less pumpkin according to your preference. For a thick soup, the broth just needs to cover the pumpkin.
We cook the soup on low heat under the lid. Pumpkin should become soft, then it's time to add cream. Blend the boiled soup with a blender until smooth. Everything is ready. Before serving, fry the bacon or sausage and add in portions. Sun-dried tomatoes are perfect. Sprinkle with herbs, pumpkin seeds. You can drizzle with olive or pumpkin oil. Bon Appetit.
