Cooking method:
Crumble the yeast into a bowl, add a few tablespoons of flour from the total amount, sugar, warm water, stir, cover and leave in a warm place for 20 minutes. Then, add melted butter, salt, warm milk, protein, stir. Knead the dough by adding flour. Cover and leave warm for 1.5-2 hours.
Meanwhile, make the filling. Cut any smoked meat, or bacon, or ham, or just sausage into small cubes. Add mushrooms fried with onions (I take champignons) and grated cheese on a coarse grater, mix. Add salt and spices if necessary. Knead the dough lightly, divide into 12 parts, round off. Roll out an oblong cake from each piece, put the filling along, pinch.
Put the resulting tube with the seam down and not tightly twist the snail, bending the tip under the snail. Put the buns on a baking sheet, cover and let stand for 20-25 minutes. You can make shallow cuts with the tips of scissors, as shown in the video. Lubricate with yolk mixed with milk or water.
