It's easy to prepare a holiday on a normal day. Delicate and colorful vegetables with different flavors, thanks to cheeses and sauce, will make any cloudy day bright. #games #vegetables

Baked vegetables with goat cheese, pesto and blue cheese

Ingredients: red and yellow bell peppers, red onion, sweet potato 🍠, goat cheese, blue cheese, pesto sauce, cherry tomatoes, broccoli 🥦, rosemary sprig, salt, ground black pepper, lemon (juice), olive butter

Cooking method:

Peel the sweet potato and cut into large pieces. Fold into a baking dish.

Chop the red onion into large pieces. Sweet pepper into four parts.

Mix vegetables in a baking dish. Brush the pepper boats with the pesto sauce. Inside each, put half a cherry tomato and a piece of goat cheese.

Cut the remaining tomatoes in half and arrange among the vegetables. Crumble the blue cheese and spread over the vegetables as well. Add broccoli.

Preheat oven to 200 degrees. Salt the vegetables in the form, season with black pepper and sprinkle with lemon juice. Drizzle with olive oil. Put a sprig of rosemary. Close the mold with foil. Bake for approximately 40 minutes. Focus on your oven.

When the vegetables are cooked, remove the foil, remove the rosemary and place back in the oven for another 10 minutes.

Garnish with remaining goat cheese and serve.
