At first, pizza was considered a dish of peasants and people from the lower classes. But over time, having overcome all the barriers of etiquette, it even appeared on the royal table. For example, according to legend, Margherita pizza is named after Margherita of Savoy, the second Queen of Italy, who once chose this particular pizza for my guests, because I saw on it the colors of the Italian flag: red (tomatoes), white (mozzarella) and green (oregano). Therefore, anyone who has ever tasted a piece of hot fragrant pizza can consider himself at least a little king π€΄π»
Ingredients: FOR THE DOUGH:, flour, water, fresh yeast, olive oil, salt, FOR THE FILLING:, mozzarella, mushrooms, large potatoes, FOR PESTO: basil, extra virgin olive oil, Parmesan, pine nuts, garlic, salt, pepper
Cooking method:
Pour water into a large bowl and put yeast in it.
Add sugar, stir well until yeast dissolves.
From the total amount of flour indicated in the recipe, add 3 tbsp. Mix well, cover with a lid or cling film and leave for 15-20 minutes.
Then add all the remaining flour, salt, mix a little.
Add vegetable or olive oil and knead the dough.
Knead the dough for 10-15 minutes. Cover with a lid or cling film and leave in a warm place to proof for 1 hour.
After an hour, do a warm-up and leave for another hour. During this time, the dough should double or triple in size.
Then we spread the dough on a work surface dusted with flour, carefully release excess air, divide by the desired number of pieces. We form "balls" and leave for 10 minutes and prepare the pesto sauce.
In the meantime, you can prepare the famous Italian Pesto sauce. To do this, put basil leaves, pine nuts, a small clove of garlic in a blender (but if anyone like, you can cook without it), grated Parmesan, salt, black pepper and add olive oil. In this case, the oil is from half to β of half of the total volume. We punch well until a homogeneous mass is obtained. Pine nuts can be substituted for walnuts if desired.
Potatoes are peeled, cut or rubbed on a grater into thin slices. Blanch in boiling water for 1 minute and place on paper towels. We discuss. In principle, you can cook raw potatoes, but in this case, they must be cut very very thinly. We clean the mushrooms and cut into thin slices.
Roll out the dough not very thick. Although it all depends on your preferences. My family loves thin crust pizza.
We put the rolled out dough on the prepared sheets, greased with vegetable oil. Add a few tablespoons of pesto and spread evenly. If you have difficulty with pesto products, you can basically skip it. The pizza will still be delicious.
Then we spread the potato plastics close to each other.
Next lay out the mushrooms. The sequence is not required. Sometimes I spread the mushrooms first, then the potatoes. Salt and pepper.
Fall asleep with grated mozzarella.
Usually after assembly, I leave the pizza sheets for 15 minutes and at this time I set the oven to warm up to 210 Β° C.
Bake pizza for 15-20 minutes.
