The paws of broiler chickens are suitable for this dish - they are fleshy, the dish will not work from other paws. The paws are now sold already cleaned, you just need to wash them well and cut off the claws and calluses on the paw pads. Soak paws in cold water for 2 hours.
Dip the paws in boiling water, remove the foam and cook for 10 minutes. Then drain this water, rinse the paws, pour boiling water over it and cook for another 30 minutes with the addition of salt, bay leaf and allspice peas.
