Like any popular dish, these pancakes have many different variations. I offer my version of "disheveled donuts", my family appreciated it 😋
Ingredients: kefir, egg, flour (3 tablespoons with top), salt, potatoes, smoked bacon, lingonberry sauce
Cooking method:
Mix kefir with egg, salt and flour. Let it brew.
At this time, peel and chop the potatoes on a grater. It should be noted here that it would be nice to get a second pair of hands at this moment, because rubbing potatoes (directly into the batter that you have) and fry the bacon (on both sides until crispy) preferably at the same time 😉
When, with heroic efforts, the potatoes are finally grated, and the fried fragrant bacon is not eaten with heroic efforts (fry on medium-high heat - 7 out of 10, in small batches so that the slices fit freely in the pan), turn on the oven at 200 gr and start frying the pancakes right in the same pan where you just melted bacon.
Stir the batter occasionally and spoon the batter into the hot skillet. I cooked just like bacon on medium-high heat, a few pancakes at a time. Don't forget to even out the batter, making the pancakes as thin as possible. This way they cook faster and more evenly.
When you fry the last batch of pancakes, the bacon and first pancakes will cool down a bit. To serve them hot, put the pancakes and bacon on one plate (you can wrap it in foil), and put in a preheated oven for 10 minutes.
Serve hot with lingonberries or lingonberry sauce.
