Cooking caramel
- I weigh 200 g. Sahara.
- I remove the zest from one and a half lemons, add it to sugar and rub it. (This can be done the day before and leave the sugar overnight to soak up the lemon flavor well.)
- I squeeze the juice from the lemons into a saucepan.
- I add to it 50 g of butter, a pinch of salt and sugar with zest.
- I move the saucepan to the stove and bring the whole mass to a boil and dissolve the sugar.
I cook caramel to 118 ° C degrees.
- Adjust the heat so that the mass boils, but does not run away.
- All in all it took me 5 minutes. I turn off the heat.
- I weigh out 140 g of chocolate (I have 100 g of milk and 40 g of black).
- When the caramel has stopped bubbling, add chocolate to it and mix well.
Forming and freezing
To make the caramel smooth and homogeneous, you can pierce it with a blender. Ready caramel can be allowed to cool slightly and pour it into silicone molds.
If you have small silicone molds, then you can pour the caramel and stabilize it in the form of sweets.
- Be careful as the caramel is very hot!
- If you like nuts, you can add a nut inside the caramel and pour over the top.
To stabilize the candy, you need to hold it in the refrigerator. The result is a soft candy with a nut inside.
