I really love cottage cheese😍 I eat it every day in a different form, including in the form of cheesecakes. Cottage cheese pancakes are a capricious dish, they like to spread in a frying pan and then stick together 😅. According to this recipe, they will turn out dense, elastic and will not touch the neighbors in the pan😉.
Ingredients: cottage cheese, yolks, flour, semolina, vanilla extract, sugar, salt, coconut oil for frying, raisins, coconut chips if desired, berries for decoration
Cooking method:
Mash the cottage cheese with a fork, add the yolks, flour, semolina, vanilla extract - mix thoroughly. Let stand for at least 30 minutes (can be in the refrigerator), add sugar and salt. So flour and semolina will absorb liquid from cottage cheese and yolks 🥚, and sugar will not have time to melt.
I divided the mass into 2 parts - I added raisins to one (pour boiling water, dry with a paper towel), to the other - 1 tbsp. l. coconut flakes (not felt, better 2-3 tbsp. l put if desired).
Form balls from the curd mass, roll in flour, press until the required thickness of the cheesecake is formed, I got 18 pcs. And I froze most of it 🌬️, the taste is no worse and very convenient. 👍
Fry in coconut oil (vegetable is also suitable) on a fire slightly below average for 15 minutes, turn over, cover and fry for another 15 minutes.
Serve slightly warm with sour cream, condensed milk, berries🍓 and nuts🌰.
