During cauliflower picking season, be sure to prepare a juicy and tasty side dish with it, for example, in the oven with an egg. A dish is created in a matter of minutes, but before baking the vegetable inflorescences, you must blanch in boiling water with the addition of citric acid for about 3-5 minutes so that they lose their density.

You can add grated hard cheese, various seasonings and spices, sour cream or thick classic yogurt to the batter. Bake the cauliflower in one layer so that it is covered with a golden brown crust on top. Serve warm so that the upper cheese layer stretches when the inflorescences separate from each other.

Ingredients:

- 1 fork of cauliflower (400 g);

- 2 chicken eggs;

- 80 g of hard cheese;

- Salt and pepper to taste;

- 40 g butter for greasing the mold;

- 3 pinches of citric acid for cooking.

Preparation:

1. Wash the cauliflower forks in water, cut off the inflorescences from it and put them in a deep container. Wash it again. If you have free time, then turn it over and place it in a bowl / basin, fill it with salted cold water and leave it for half an hour to remove any living creatures and minimize the level of nitrates in the vegetable.

2. Boil water in a cauldron, saucepan or stewpan, adding a couple of pinches of citric acid to it - it is needed so that cabbage inflorescences do not change their color from white to gray during blanching. Put the cabbage in boiling water and simmer for about 3-5 minutes until half cooked. You do not need to simmer more time so that it does not turn into mashed potatoes.

3. Lubricate the baking dish with butter - you can replace it with pork or goose lard.

4. Throw the inflorescences in a colander and drain the excess liquid, then move them into the mold and level them.

5. Beat two chicken eggs in a separate deep container along with salt and ground black pepper. At this moment, you can add sour cream of any fat content, classic yogurt.

6. Pour the egg mass into the cabbage in the form. Trying to cover its entire surface.

7. Grind hard cheese on a fine mesh grater.

8. Sprinkle the cauliflower mass on top. We send the form to the oven at 180-200C and bake for 20 minutes until golden brown and brown.

9. Remove the dish from the oven and let the dish cool down. Put the baked cauliflower with egg on plates, decorate with fresh herbs. Serve with various sauces or baked meat, fish.
