I don’t know about you, but in my family yogurt is a daily guest on the table. We add it instead of sour cream to salads, make pp-baking and eat it as an independent dish, adding berries, nuts
Ingredients: milk (fat content 1.5-2.5%), Greek yogurt (I have Teos)
Cooking method:
‼️Bacteria love cleanliness, so I warn you that while cooking, you should not lick the spoon.😉😁
Boil milk, cool to t=35-37° (‼️temperature is VERY IMPORTANT).
TEOS at the rate of 50 g per 1 liter, place in a separate saucepan and dilute with 2 ladles of milk cooled to 35-37 °, stir until smooth. Pour this mixture into the total mass, mix. This procedure is done so that there are no lumps in the finished yogurt. ⠀
We cover the pan with a lid, wrap it in a warm sweater, jacket or blanket and put it in a warm place in the house for 12 hours. If the volume of milk is 1-2 liters, 8 hours is enough.
‼️ ATTENTION, do not put on the hot floor in the bathroom, the battery, the bacteria will cook 🤷 ⠀ If you have a slow cooker with the "Yogurt" mode, we do the same. When the mixture is ready, we place the bowl in the slow cooker, set the mode and time we need (based on the calculation as written above).
After a while, the yogurt should thicken. But that's not all.
We put gauze folded 2-3 times in a colander (I have a bag, carefully lay out our yogurt and send it to the refrigerator for 12 hours. During this time, our yogurt will release whey. ‼️Do not rush to pour it out, the next post will be dedicated to it😉.
We take out the yogurt from the refrigerator and transfer it to glass jars (it is stored in glass for up to 14 days). I use jars from under Teos, because my whole family eats yogurt and it "flies" into our tummies in a couple of days😂.
I recommend putting aside the finished yogurt for the next starter in a separate jar, then you do not have to buy it.
Yogurt is ready!!! ⠀ You can use it instead of sour cream, with berries, chocolate, nuts, use it for baking, etc. ⠀ The yogurt turns out to be thick, as much as a spoon, and most importantly, very tasty.
