Ingredients: Red bean, Medium eggplant, Bulb onion, Medium carrot, Tomato paste, Mushrooms about, Medium beets, cilantro, celery stalk, garlic, salt, pepper, vegetable oil, and most importantly sausages Chorizo. I have mine ready.
Cooking method:
Soak beans for 2 hours. Don't forget to rinse. We put the washed beets to cook until cooked (2 hours)
Yes, I have Chorizo ready, my own, you can also use minced meat. See my chorizo sausage recipe. We make minced meat or small. Meatballs (the size of a fingernail) or break into a chowder. As in bolognese sauce
Heat the oil in a saucepan and saute the onion (it can also be fried. It will give a slightly different taste) and add the carrots, bring to medium softness.
Cooking the rest of the vegetables.
We introduce mushrooms and bring to readiness and cilantro, but only finely chopped root and stem. And beans.
When it all became beautiful, we introduce everything else.
We clean the eggplant from the skin. (So it does not give bitterness !!!)
Simmer until beautiful and add CHORIZO (cut into small cubes) and tomato paste and garlic.
We bring to readiness and taste. This is still a stew and if you add water thickly. When done, sprinkle with the rest of the cilantro.
