✨And today I want to bring to your attention a recipe for a very soft, incredibly tasty and tender cottage cheese pie! And even if you have had "unfortunate" moments with baking before, in this case, this will definitely not happen.

When a glass of kefir remains and there is a little cottage cheese, I cook such a pie: without a mixer, without whipping and for 10 minutes to prepare

✨To prepare the dough, you don’t need to do any manipulations, you don’t even need a mixer for whipping, but just mix the filling and that’s it! I'm sure this recipe will definitely replenish your treasury of recipes.🥰

To prepare such a pie, kefir must be at room temperature. But usually rarely does anyone get it out of the fridge in advance! And it's not scary. Cold kefir can be warmed up a little in the microwave, or you can simply put a glass (mug) with kefir in a bowl (pot) of hot water - in just 5 minutes it will become warm.

Pour kefir into a bowl and add half a teaspoon of soda. We mix and wait for the soda quenching reaction to occur, the kefir will be covered with many small bubbles and even increase in volume.

Now add sugar, vanillin (or vanilla sugar), a pinch of salt, pour in half a glass of vegetable oil and beat in two eggs.

And just enough to mix everything with a fork or whisk.

Next, add the sifted flour and a spoonful of baking powder.

Mix everything well so that there are no flour lumps left in the dough. The consistency of the dough should not be too thick, fluid, it reminds me of condensed milk.

And now we begin to prepare the filling. We put the cottage cheese in a bowl and, using a fork or a pusher, grind the existing large pieces.

Add sugar and egg. I also add lemon zest, but this is an optional ingredient, I just like the combination of lemon and cottage cheese. In principle, you can also add raisins to the filling.

Mix everything well and the filling is ready.

We take any suitable baking dish (diameter 22-24 cm), if necessary, grease the inside with vegetable or butter. And pour all the dough. We level.

Now we take the curd filling with a spoon, form small balls and spread them over the entire surface of the dough in a chaotic manner. No need to flush!!! During baking, the curd will sink into the middle of the pie.

We bake the cake in the oven, heated to 180 °, for about 45 minutes, check the readiness with a wooden skewer (toothpick).

And how tasty and beautiful it turns out! A ruddy crust is on top, and inside is a delicate and crumbly crumb with a fragrant curd filling. You definitely need to bake this cake.

Sugar - 200 g
Vanillin (vanilla sugar) - to taste
Vegetable oil - 100 ml
Wheat flour - 300 g

For filling:
Cottage cheese (5-9% fat) - 200-250 g
Sugar - 2 tbsp. l.
Lemon zest - 1 tsp l. (optional)
