This homemade apricot pie is perfect for summer! It is very tender and moderately moist, and slices of ripe apricots complement the flavor composition with juiciness and incomparable aroma. This pie is a must for fresh apricot season! It can be cooked at least every day. It is delicious with a cup of aromatic tea or coffee, and with a glass of cold milk.
Preparing such a tender apricot pie is not difficult and does not take long. Products are all available and the most common. Instead of apricots, you can also put slices of peaches or nectarines. And in winter, try to cook such a pie with canned peaches - it's also delicious!

Ingredients:

  • flour - 185 g
  • baking powder - 1 tsp. l.
  • sugar - 200 g
  • vanilla sugar - 5 g
  • milk - 60 ml
  • butter - 160 g
  • eggs - 3 pcs.
  • salt - 1 pinch
  • apricots - 10 pcs.

Step by step recipe

1. In a dry bowl, pour 185 g of flour, 1 tsp. l. baking powder and a pinch of salt. We mix everything.
From 200 g of sugar, separately pour 2 tablespoons of sugar.

2. Break 3 eggs into a separate bowl, add most of the sugar -150 g and 5 g of vanilla sugar. Beat everything with a mixer until a dense foam is obtained.

3. Pour 60 ml of milk into this mass and whisk again.

4. Add 160 g of soft butter to the egg-milk mixture and continue to beat.

5. Next, add the prepared flour with baking powder to the dough in three approaches and mix the dough well.

6. Grease a baking dish with butter and sprinkle with flour.
Pour the batter into the prepared pan and spread evenly.

7. Wash the apricots, cut in half and remove the pits. Arrange the apricot halves cut side up on top of the dough.

8. We put the cake in a preheated oven to 180 degrees and bake for 25 minutes.

9. When 25 minutes have passed, take the cake out of the oven and sprinkle on top with 2 tablespoons of sugar, which was previously left. Place the cake back in the oven and bake for another 15-20 minutes.

Cut the already cooled apricot pie into portions and serve.
The pie with apricots turned out to be very tasty, moderately sweet and with a pleasant sourness of fragrant apricots. Be sure to cook it, especially since it is very easy to prepare.
