A very unusual and very tasty summer recipe for unsweetened Belgian waffles. The dough is based on juicy zucchini, and this is an absolutely indescribable taste! Waffles are very tender and tasty, with a crispy crust. Of course, these savory waffles are best served warm with sour cream, unsweetened yogurt, or a white sauce based on them. They are good for breakfast and as a snack. Kids and adults of all ages love them!
Zucchini waffles are prepared quite simply and quickly, and the products you need are the simplest and most affordable.
If you have a waffle iron, then by all means try this recipe for unsweetened zucchini waffles!

Ingredients:

  • zucchini - 700 g
  • flour - 200 g
  • eggs - 2 pcs.
  • sour cream (kefir) - 5 tbsp. l.
  • salt - 1.5 tsp. l.

Step by step recipe

1. Three young zucchini weighing 700 g on a coarse grater. If the zucchini seeds are already hard, then they need to be removed.

2. Break 2 eggs to the shabby zucchini, pour 1 tsp. l. salt, 5 tbsp. l. sour cream or kefir of any fat content and pour about 200 g of flour. We mix everything well. If the zucchini starts to juice and the dough becomes liquid, then you need to add a little more flour.

3. We heat the waffle iron to operating temperature and for the first time grease a little with sunflower oil. Lay out the prepared dough.
Close the waffle iron and bake the waffles until done. The baking time depends on the waffle iron model.

4. We take out the finished waffles on a plate and serve.
These waffles are best served immediately after baking. Then they will be crispy on the outside and soft on the inside.

Zucchini waffles can be served with sour cream or other sauces. They are also delicious to eat with soup instead of bread.
