One of my favorite summer eggplant salad recipes! It perfectly combines all the ingredients. Fried eggplants with onions are in harmony with meaty sweet tomatoes and juicy crispy peppers and herbs. A simple dressing without mayonnaise perfectly balances all the flavors into one multifaceted one. This salad is perfect for daily cooking. It goes well with any side dishes and meat dishes.
Preparing such a salad with tomatoes and eggplant is not difficult at all. Optionally, if you like, you can add a clove of garlic for piquancy. And this salad becomes even tastier if you let it brew for 20-30 minutes.
Be sure to try cooking this eggplant salad, it is juicy, light, inexpensive and will greatly diversify your daily menu.

Ingredients:

  • eggplant - 1 pc.
  • sweet pepper - 1 pc.
  • tomato - 3 pcs.
  • onion - 1 pc.
  • parsley - 1 bunch
  • vegetable oil - 6 tbsp. l.
  • apple cider vinegar (wine) - 1 tbsp. l.
  • salt - to taste
  • ground black pepper - to taste

Step by step recipe

1. First, let's prepare all the ingredients.
One sweet pepper cut into cubes.
Cut three medium-sized tomatoes into slices about 5 mm thick.

2. One eggplant peeled. Cut the peeled eggplant into slices 4-5 mm thick.
We put the eggplant circles in a bowl and pour them over 3-4 tbsp. l. vegetable oil. We mix everything.

3. Put the prepared eggplants in one layer on a dry heated frying pan. Fry eggplant on both sides until golden brown. Fried eggplant in this way will contain a minimum amount of vegetable oil.

4. Cut one small onion into half rings.
Put the onion in a hot frying pan with vegetable oil. Sauté the onion over medium heat until a nice golden color.

5. Chop up a bunch of fresh parsley.

6. In a bowl, put chopped sweet pepper, fried eggplant, circles of fresh tomatoes, chopped parsley and sautéed onions. Salt to taste, pepper, season with 1 tbsp. l. apple cider or wine vinegar and 2 tbsp. l. vegetable oil. Mix everything gently and serve.

The salad turned out very tasty, hearty and fragrant. Be sure to cook it in the season of fresh vegetables.
