Figured out how to make apple pie without baking. I show what I did.

Recently, my mother-in-law literally flooded me with apples. You have to go to her several times a week and pick up huge sacks filled to the brim with apples. Last year I processed apples in puree, but this year I decided to do it differently.

I'm making apple pies. I took “Tart-taten” as a basis and revised its recipe so that it was not required to bake. This way I save a lot of time.

After cooking, I freeze the pie and leave it in the freezer until better times. Such a pie can be obtained at any time, defrost in the refrigerator for 2-3 hours - and can be served. I will not delay, let's cook!

A step-by-step recipe on how to cook Tart Taten apple pie without baking

First I'll make the apple base

  • Apples 750 g (~ 600 g peeled)
  • Butter 45 g
  • Sugar 150 g
  • Cream 33% 70 g
  • Gelatin 6 g (for granular gelatin 36 g water)
  • A pinch of salt

To do this, I soak the gelatin in cold water and leave it to swell. If using gelatin, simply soak in ice water.

Peel the apples, remove the core and cut into small cubes 1.5-2 cm in size. I set aside apples and make caramel.

For caramel, pour sugar into a frying pan and put on medium heat. When the sugar has melted and becomes dark amber, pour in the hot cream and stir quickly. At this point, the mass will begin to foam and splash heavily, be careful.

It is very important that the cream is hot. If you add cold ones, the sugar will begin to solidify.

When the cream is mixed, add the butter at room temperature and stir quickly until smooth.

Then I add the apples, stir so that the caramel covers the apples on all sides. I leave it to languish, without closing the lid, until the apples become soft, but at the same time keep their shape.

I remove the apples from the heat, add the melted gelatin and stir. To melt the gelatin, I put it in the microwave for 20 seconds.

Using a slotted spoon, I shift the apples into a ring-shape without a bottom, covered with cling film. Gently tamp it, then pour out the remaining syrup and put it in the freezer until it freezes completely (3-4 hours).

Sand base

  • Shortbread cookies 150 g (I used "Jubilee")
  • Milk 50 g

I grind purchased cookies into crumbs, add milk and mix. The mass should look like shortbread dough.

I spread the dough over the apple filling, tamp it and put it in the refrigerator until the apple layer is defrosted.

To prepare the pie for future use, I put it in the freezer until it freezes. Then I wrap the pan with a warm towel to remove the cake. I wrap the pie in plastic wrap and put it in the freezer for storage.

I remove the dessert from the mold and can be served. Let's show what I did.
