As you can see, there is a small set of ingredients. But the secret of this tasty fat is not in them, but it is in the process of cooking. So be sure to read up to the end of the recipe, so as not to miss important moments.
So, we need 1 kg of fat. It is best to take with streaks of meat - it will taste best. My skin thoroughly and scrape with a knife, it must be clean. Cut the bacon into small pieces.
We prepare the brine. Pour into pan 1 liter of water, add 4 tablespoons of salt, 3-4 bay leaves 5 peppercorns. Bring to the boil.
Once the brine boils - put in it the pieces of fat, waiting to boil again. Remove the scum and cook at maximum heat for 5 minutes, no more (hence the name of the recipe, "Orientation meeting").
Then remove the pan from the heat and add 1 head of chopped garlic. It can be cut into plates, and can squeeze through the press. We reserve the fat to cool, then remove in a refrigerator.
After 12 hours, the fat is ready. Merge brine, and the pieces may be further sprinkle garlic, pepper and herbs. The taste of bacon turns out very tender and tasty. Bon appetit, my dear!
