I offer you a time-tested recipe for rassolnik workpiece. Several years ago, I found him in old mother's culinary notebooks.
Even in Soviet times, she worked as chief accountant at a large company, a lot went on trips to work and as a secretary of the Komsomol organization. As a result, we fed the Pope.

And to the children always was the first hot meal, mum in summer harvested many, many like these semi-finished products - soup cans.

That only in its arsenal was not: soup, pickle, grub, mushroom, sorrel, etc.
Today will discuss the pickle.

Recipe "Pickle with barley for winter"

Ingredients:

3 kg of fresh cucumber
1.5 kg of tomatoes
1 kg of onion
1 kg of carrots
0.5 kg of pearl barley
2 tbsp. l. coarse salt without slides
0.5% vinegar cup 9
0.5 l of water
0.5 cup vegetable oil
1 h. l. peppercorns
5 peas allspice
5 pieces. leafs

Preparation:

1. Wash cucumbers and cut into cubes. If desired, cucumbers can grate, as you wish.

2. Onion peel and finely chop.

3. Carrot Grate

4. Tomatoes Wash and mince.

5. Barley wash.

6. Share tomato mass in the pot to extinguish and add water. Add salt, sugar and vegetable oil.

7. Then put on top of prepared cucumbers, onions, carrots and barley. Do not forget about the bell pepper and bay leaf. To mix everything.

8. Put pan on a medium heat and cook weight exactly 20 minutes after boiling.

9. Pour the vinegar and simmer another 10 minutes.

10. Banks sterilized, boiled lids.

11. The hot preform for rassolnik expanded in banks and immediately roll covers.

Banks turned upside down, and the heat required to wrap. Leave on for 12-16 hours to complete cooling.
After cooling and infusion workpiece, cucumbers miraculously transformed into the salt.

10-13 turn out 0.5 liter bottles. They are perfectly stored in a cupboard in the kitchen.

In winter, this jar will be a real lifesaver.
We just need to boil the broth, add potatoes and a jar of a workpiece.
