Hello! On my cooking channel many different recipes for burgers - fish, meat, vegetables. All recipes have a hen's egg. But here recently in the comments of my recipes I began to criticize, saying the egg into cutlets, and particularly chicken, is added. There were a lot of comments.

All my life I would add a fresh egg in meatballs, whether pork, or chicken or chopped cabbage. Mom taught me so. She told me that without egg patties can fall apart.

In the comments readers write me that good burgers prepared without eggs. Ostensibly because they are obtained softer, fluffy and soft. And they are tough egg.

But instead of eggs offer add soaked in milk, a loaf of bread, flour, semolina (these products like glue and do not give minced cutlets collapse). Also, grated apple (why? I do not understand).
