Option №1 - Cucumbers with red currant

Ingredients:

4 kg of cucumbers
850 g redcurrant
4 umbrella dill
8 cloves garlic
3 sprigs basil
2 handful leaves (horseradish, cherry, currant)

For the marinade:

3 L of water
70 g. salt
50 gr.yu sugar
10 gr. citric acid

Preparation:

1. Cucumbers wash. Remove the tips or make punctures a knife or fork. I usually choose the first option.
2. Cucumber soaked for 30-40 minutes in ice water.
3. Rinse with soda cans and sterilized.
4. Rinse with red currants and herbs under running water.
Herbs and spices (pepper, peas, bay leaf, clove) pour very hot water.
5. Place the greens and cucumbers in a 2 liter jar.
6. Boil plenty of water and 2 times, pour into jars. Hold for 15 minutes. After re-filling drain the water.
7. In the future, pour marinade salt, spices, sugar and chopped garlic. Boil for 7 minutes. Per minute until ready to add citric acid.


8. The banks with steamed cucumbers lay washed and the dried red currants.

9. Pour the hot marinade to the edge of the cans. Under iron lids should not be room for air.
10. Tighten boiled lids. Put upside down to check for leaks. Cool.

Variant №2 - Cucumbers "Special"

Ingredients:

1.5 kg of cucumbers
1 hot pepper
3 garlic cloves
a handful of leaves (currant, oak, horseradish)
10 peas black pepper
30 oz. Sahara
60 gr. salt
1 L of water

Preparation:

1. Cucumbers are washed and soaked in cold water for 2-4 hours.
2. Greens also wash, shake and put on banks.
3. Place the soaked cucumbers in jars with garlic cloves.
4. Brine boil 1L of water, add sugar, spices and salt. Boil.
5. Hot fill cucumber brine. Cover the jars with a cloth. Leave on for 3-5 days in the heat for fermentation.
6. After completing the merge and brine boil. Pour hot brine back into banks and close their lids.
7. After cooling, remove the dark compartment, is further away from heating appliances. It can be in the closet.
