A few days ago he came to me and a friend shared a recipe of delicious meatballs in the oven, which can be obtained very juicy and soft, and most importantly useful. And today, talk about the side dishes, which we did to such cutlets, and it seemed to so delicious that I decided to repeat it and to share the recipe with you.

For this recipe we will need one eggplant, pepper and herbs. Eggplant need pierced with a fork in several places, put it in the pan with the peppers and send in a preheated oven to 200 degrees for 30-40 minutes.

Once they are ready, put them in clean bags and wrap, in order that they may well "propotel".

Further, when they are almost cool peel.

Cut into cubes of medium size and send to the already boiled rice.

I also add finely chopped fresh herbs, olive oil, salt and pepper. All is well mixed.
