How to cook the perfect batter. secrets of cooking

Ingredients:
50 ml of cold water
flour 60-70 g (3 tablespoons) depending on the size of eggs
eggs 2 pc
Vegetable oil 1 tsp
pinch of salt

All products must be chilled.

Take eggs, separate the white from the yolk. The yolks add water, salt, oil. Stir.

Then add the flour and stir to avoid lump of flour. Stir best whisk.

The protein pinch of salt and whip whisk or electric mixer until a fluffy protein mass, stable peaks. The salt improves whipped proteins.

The proteins in portions add premix yolk weight and easy movement whisk stir until uniform. Proteins make batter air. NOT mixer whisking.
