Festive salad with egg pancakes

This simple salad is very tasty, satisfying, unusual and very original in taste. Guests cannot immediately guess what it is made of!

If you are tired of "Olivier", "Fur coat" and "Crab" - then save the recipe!

Ingredients:

4 eggs
chicken breast
cucumber (fresh or salted)
mayonnaise
salt
pepper

Preparation:

1. Boil or bake the breast. Baked by the way tastes better, especially if with spices and aromatic seasonings.

2. Then cut the chicken fillet, or in our case the breast, into even slices, then into strips. It is not worth chopping finely or disassembling into fibers.

3. Beat eggs with a little mayonnaise. There was actually heavy cream in the recipe. For 4 eggs 6 tbsp. l. cream or 1 tbsp. l. mayonnaise.

But this is not necessary, the pancakes will come out great on eggs alone. Season with salt and pepper.

4. Grease a skillet with oil and bake some very thin pancakes. It is possible from both sides.

5. Roll up the finished pancakes and cut them across into strips or straws. The thickness is no more than 0.5-1 cm.

6. Chop the cucumber into strips.

7. Mix all prepared ingredients in a salad bowl.

To taste, you can add greens, onions or green onions, garlic.

8. Season with good fatty mayonnaise. Season with salt and pepper. Leave to soak for 15 minutes.

Egg pancake salad is ready!
