Today I'm preparing ratatouille! More precisely, I cook it in the summer, almost regularly. And just then the eggplants "drove up" in large quantities. We have enough blanks, so we eat in any form.

And we especially love ratatouille.

There are many variations on this dish. But in the classic version, eggplants, tomatoes and onions are necessarily present. Everything else is at will and taste.

He is strange, of course, this ratatouille. It seems to be French, but ordinary vegetables look and taste so simple.

But this is where his magic lies, so that it is almost home-like, cozy and like a visit to his grandmother in distant childhood. French, if that. The dish is French.

Ratatouille - a classic recipe

So, what if there is no time to cut and spread all this beauty? Cooking a lazy option!

The picture above is a classic. And lazy, when too lazy to cut everything into thinnest circles and lay out like fish scales in layers. And no, what many now call a lazy ratatouille and simply make an "accordion" with tomato and cheese from eggplant - this is not him.

Ratatouille is a delicious and interesting Provencal dish. Basically, these are vegetables fried and stewed in broth or white wine.

And this is what the French lazy ratatouille looks like.

Ingredients:

2 eggplants
1 squash
3 large tomatoes
garlic
sweet onions
bell pepper
1 tbsp. l. provencal herbs
vegetable oil
broth or dry white wine

How to cook:

1. In vegetable oil, fry the onion and garlic in cubes. Then add the zucchini and eggplant, also cut into cubes. Love bell pepper - put it, no - it is not needed here in principle.

2. Lay the tomatoes on top in slices or quarters. Pour in broth or wine. No more than 0.5 cups.

3. Stew ratatouille in a bowl with thick walls, it tastes better with a rooster.

4. Be sure to salt and pepper to taste. You can add chili peppers. 5-10 minutes until ready to add Provencal herbs.

Ratatouille, although lazy, should not be boiled into porridge, all vegetables must be stewed or even better roasted over the lowest heat so that they retain their shape and taste.

Greens optional. A slice of baguette with liver pate - I recommend!
