Chicken Saltison: a recipe that will keep you simple

Ingredients:

5 large chicken thighs
100 g bacon
1 hour l. salt
2 cloves of garlic
0.5 tsp l. ground black pepper
a pinch of nutmeg
bag of gelatin
1 tbsp. l. seasoning for chicken

How to cook:

1. Wash chicken thighs, remove skin, remove bones and fat. Cut the flesh into cubes or large cubes. You can also cut up raw bacon, but you can do it without it. And chop the garlic finely.

Mix the mass, salt for 1 tsp. l. coarse salt without top, add nutmeg, pepper and seasoning for chicken. Pour 10 gr into this minced meat. dry gelatin. Mix.

2. For the form, you will need a special ham maker or a long narrow box of juice or milk with a capacity of 1 liter will do.

You need to put all the chicken meat in spices into it, tamping it with your hands and a spoon so that there are no voids.

There should be some free space on top.

3. Place the wire rack or silicone mat on the bottom of the high rack and place the box with the meat in the middle, opening up. Do not lay the box on its side!

4. Pour water into a saucepan, bring to a boil, then reduce heat and continue cooking for about 1.5 hours.

5. Then turn off the stove, carefully remove the box from the boiling water and place it in a bowl or other saucepan. Leave to cool for 2-3 hours. Then refrigerate for 8-12 hours.

6. Carefully cut the box along the seam and remove the saltison.

Cut into slices and serve.
