It is not necessary to wait for February 23 or March 8, just try to enjoy today with a very tasty meat dish.
Ingredients:
1 kg pork pulp (tenderloin)
100 ml dry white wine or cognac
green sour apple
100 g lard or bacon
salt
peppercorns
vegetable oil
Preparation:
1. Rinse a piece of rectangular pork tenderloin and pat dry with paper towels.
2. Using a sharp knife, make cuts in the meat across the piece, without cutting it to the end, at a distance of about 1.5-2 cm from each other.
4. Cut pork lard or bacon into very thin strips or 2-3 mm slices.
5. Wash, peel, core and cut the apple, but not thicker than 5 mm.
6. In each cut of meat, put a plate of bacon and an apple slice.
To prevent pork from opening up like an accordion and not falling apart, a piece of tenderloin must be tied up culinary thread or fasten with wooden skewers, which are soaked in cold water.
7. Put the meat in a greased dish, drizzle with vegetable oil, sprinkle with ground black pepper and salt.
8. Put pork with apples and bake in an oven heated to 200 degrees for 45 minutes.
After the specified time, pour over the meat with dry white wine or cognac and continue to bake for another 15-20 minutes.
When the meat is ready, remove the baking sheet from the oven, remove the pork skewers and place on a dish.
Decorate the pork with herbs and serve.
