All week we eat pasta, cutlets, sausages, buckwheat soup and in general, sometimes anything. And on Saturday you can come off. Pick up a frying pan and... fry potato pancakes. And better with meat.
Ingredients:
1-1.5 kg potatoes
2 onions or a bunch of green onions
350 gr. minced meat
3 eggs
salt
pepper to taste
How to cook:
1. Wash, peel and grate the potatoes. The secret of good potato pancakes is in the correct grating of potatoes - 2/3 should be grated on a medium grater, the rest on a coarse grater.
Then squeeze the potato juice well twice, but do not rinse!
2. Break 2 eggs into grated potatoes, add salt and ground pepper. If in doubt about your potatoes, then you can add 1-2 tsp. l. flour. But this is not a required ingredient, since everything works out without it.
Some recommend mixing potatoes with sour cream or mayonnaise, as well as grated onions. Of course, this is also possible. Try it!
3. Grate the onion or chop very finely and mix with the minced meat. Or take green onions. Here, break the third egg, salt and pepper.
Knead the minced meat.
4. Potato pancakes and potato pancakes are always fried in a large amount of odorless vegetable oil. Heat 3-5 tbsp. butter in a pan.
5. Put small pancakes from the potatoes into the butter with a spoon. Fry them on one side for 3 minutes and then put the meat filling on top.
6. Cover the dish with a lid and continue frying for another 3-4 minutes. Then put the second layer of raw potato mince on the filling, forming a round cutlet. Press the mass with a spatula and turn it over immediately.
7. Fry potato pancakes over medium heat until tender.
Serve with sour cream!
