Oh, here she is the queen of the fields! Boiled corn on the beach... The cost of such a delicacy sometimes reaches 150 rubles per ear. And the cost in fact
zero. If you know where corn grows and how to cook it correctly.
I buy corn on the market for 10-15 rubles per ear and then cook it myself.
How to cook? It all depends on what kind of corn you purchased. It is advisable to take a young and slightly immature one.
Rule # 1 - maturity
The right corn to cook will have light grains and a pleasant milky flavor.
Bright yellow and hard grains are a clear sign of corn that is too ripe for cooking or... stern. It can also be cooked; it will take up to 1.5 hours to cook.
Important: young corn (but not too much), the most delicious and cooked no more than 15 minutes.
Rule # 2 - cut the excess
It is advisable to clear the ear of all leaves and "threads", cut off both ends mercilessly and clean up everything that does not look good.
Rinse in cold water and set aside until next cooking step.
Rule # 3 - no salt
Salted corn is delicious and even perfect. But it is best to cook it in plain water without additives, since salt makes the cooking time-consuming and the cob will end up being tough.
Rule # 4 - butter
I like it with vegetable, but some prefer butter over butter.
How to decide correctly only for you, the main thing to remember is that first cooking, then salt and only at the end oil.
Rule # 5 - don't cook for future use
Corn tastes good just cooked, and when it cools down, it’s not at all the same. Moreover, the grains dry out immediately after cooling and become rough and tasteless.
You can, of course, cut off the grains and put them in a salad or stew, but that's a completely different story.
How to cook it correctly?
And finally, the recipe, as I do.
1. Peel off the cob, cut off the ends and wash.
2. Boil water in a large saucepan, then reduce heat and put the ears in boiling water, cover with a lid.
3. Cook slightly unripe corn for 10-15 minutes with a low boil.
4. Turn off the heat, close the pan with a lid and leave to steam for another 10-20 minutes.
5. Put the finished corn on a plate or in a bag (if you take it with you), sprinkle generously with coarse salt and pour over with oil.
