It seems to me that everyone already knows that we are not recovering from specific foods or dishes. We are recovering from banal overeating.
Moderation should be in food. Calorie counting and the balance of proteins, fats and carbohydrates helped me establish eating habits and lose weight.
Thanks to food control, I can eat my favorite foods and lose weight.
The other day I was preparing khinkali and I want to share the recipe with you. I love Georgian cuisine, what can I do. But I still try to adapt the dishes and cook them less high in calories and more healthy.
✅I needed the following stuffing products:
- turkey thigh fillet - 600 g,
- 2 medium onions - 160 g
- a bunch of parsley - 25 g,
- spice: salt to taste, generously: black pepper and juniper seasoning, whisper of hops-suneli, bay leaf 3 pcs.
✅ For the test, I used:
- 1 egg,
- 500 g whole grain wheat flour
- 250 g of water at room temperature,
- a pinch of salt.
Cooking.
Let's start with the test.
My whole wheat flour is complex carbohydrates. If you allow yourself fast carbohydrates, you can use regular premium wheat flour.
Rule of thumb: flour to water in a 2 to 1 ratio.
We take 500 g of flour - it means there will be 250 ml of water.
Combine flour with an egg, room temperature water and a pinch of salt. Knead an elastic dough.
It will take a long time to fit. We kneaded the dough and set it aside to rest.
Cooking the filling.
We brew several sheets of lavrushka in advance with boiling water (100 ml) and leave to infuse until it cools.
I prepared minced turkey thigh fillet in advance. Gorgeous khinkali can also be obtained from beef. Pork and lamb will be high in calories and fat for us.
I also turned the onion in a meat grinder beforehand. The ideal ratio of onion to minced meat is 1 to 3. I have a little less onion.
Combine minced meat with onions, add finely chopped parsley (or cilantro, who loves it). Add spices to taste. I put in the juniper seasoning generously - it goes well with poultry, as well as some hops-suneli. Salt and pepper to taste.
Add to the minced meat 100 ml of water, which was infused on bay leaves and knead the minced meat. The minced meat will be thin.
I divided the dough into 2 parts, rolled sausages out of them and cut the sausages into small equal parts.
Each part was rolled into flat cakes with a thickness of a little less than 5 mm and a diameter of 12-15 cm. It is not necessary to roll out the dough thinly, so that it does not break and the broth does not flow out as a result.
Put a tablespoon of minced meat in the middle of the rolled dough. Raise the edges of the dough up and pinch it, going in a circle, forming folds. It turns out a bag. There should be air inside.
The tip can be cut off for a more aesthetic appearance, but not at the root.
I advise you to immediately freeze the khinkali, while sculpting the next batch, so that the juice of the filling does not soften the dough and it does not break.
Cook in salted water for 10 minutes, until tender.
How is khinkali eaten? They hold the tail, bite off a piece and drink the broth, and then eat the khinkali itself. They don't eat the tail.
