Good day and delicious weight loss!

All my adult life I have been fighting overweight. Sometimes I beat him, sometimes he beat me.

But everything changed when I changed my attitude to food, to its preparation.

Calorie counting and BJU balance helped me.

Your favorite dishes can be prepared with less calories than we are used to.

Today I want to tell you how the other day I was preparing mashed vegetable soup.

Not everyone loves vegetable soups, but as soon as cheese appears in the ingredients, vegetable soup becomes a favorite dish.

✅ For the soup, I needed the following ingredients:

  • small zucchini - 370 g,
  • cauliflower (I have frozen) - 295 g,
  • small carrots - 80 g,
  • small onion - 70g,
  • a bunch of parsley - 20g,
  • processed cheese, box - 200 g,
  • salt, black pepper, dry garlic, smoked paprika, favorite dry herbs - I have "Italian herbs".

✅Cooking.

Chop the onion arbitrarily. I grated the carrots on a coarse grater. I don't like the taste of undercooked carrots and onions in soups, so I cook them first.

The water (I have exactly a liter for the specified amount of ingredients) boiled - I sent the carrots and onions to cook and salted the water.

When the carrots and onions were boiled a little, I added cauliflower and zucchini, cut into small pieces.

Cook for 15-20 minutes over medium heat until vegetables are ready, then add finely chopped parsley and spices: black pepper, dry garlic, Italian herbs.

Remove the pan from the heat and use a hand blender to puree everything.

To play with the consistency, you can first pour a little broth into a bowl and add it a little bit at a time, achieving the consistency of the puree soup you need.

I didn't drain the broth - the consistency I like came out - not too thick and not liquid.

After breaking through the vegetables well, add the melted cheese and put the pan on the fire.

Bring to a boil, stirring the cheese well.

That's all done. The soup is cooked quickly, but it turns out delicious and tender.

When serving, sprinkle with smoked paprika in portions.
