Today I want to share with you the idea of breakfast, or rather a recipe for wonderful muffins with ham, vegetables and cheese.
Almost pizza muffins!
✅I needed the following products for the cupcakes:
- chicken ham - 65 g,
- bell pepper - 20 g
- green onions - 5 g,
- semi-hard cheese (it is better to take suluguni) - 20 g,
- chicken egg,
- a jar of soft cottage cheese - 125 g,
- whole grain rice flour 50 g and corn flour 30 g,
- a pinch of salt, 1/2 teaspoon of baking powder, a pinch of dry basil.
✅Cooking.
For the dough, mix the cottage cheese with the egg, salt, add dry basil and mix well.
Then mix the flour with baking powder and add to the curd. We mix.
The dough is ready.
Cut the ham, bell pepper into small cubes and finely chop the green onion.
Three cheese on a coarse grater.
Add cheese, ham, pepper and onion to the dough. We mix.
We spread the dough into molds. I have silicone molds, I do not lubricate them with anything.
We send it to the oven, preheated to 180 degrees for 30-35 minutes.

You can diversify the muffins by adding different vegetables. You can even put a pickled cucumber for piquancy - it will be very tasty!
