We were lucky, our vegetable stall is located 10 meters from the entrance. Therefore, we can buy fresh vegetables every day.
I often cook zucchini pancakes. And recently it was with oatmeal. This time I decided to make these stuffed pancakes.
The only thing I regretted was that I used bulk processed cheese. It didn't melt on the inside as I hoped π€¦ββοΈ

π©βπ³ PREPARING π©βπ³
Zucchini rub on a coarse grater, a little add some salt (this way the juice comes out faster)
Meanwhile, carrots rub finely grated, onion and pepper grind π
After 10 minutes, the juice from the zucchini went well π
Zucchini wring out, add egg, sour cream, vegetables (except tomato)
Cheese and tomato cut small pieces π
Into the squash mixture add oat flakes. I add 2 heaped spoons in pure form, and grind 2 spoons into flour in a coffee grinder.
Stir and leave for 20-25 minutes to swell the oatmeal π
Fry So: lay out spoon thin pancakes, on top put cheese and tomato and close squash mixture. Fry over low heat on both sides, so that the onions have time to fry π
