Ingredients:

We take 2 kg of eggplants, cut into small cubes. You do not need to remove the peel. Then sprinkle them with salt, mix and leave for an hour and a half or two to release the bitterness.
Meanwhile, fry one kg of onions in vegetable oil. I cut the onion into half rings, but you can also cut it into cubes.
Grind 2 medium heads of garlic. I usually chop the garlic with a knife, or cut into slices. You do not need to crush it through a press, the garlic should be exactly small pieces.
We wash the eggplants from salt, squeeze lightly and fry in vegetable oil. It is most convenient to fry the eggplant in portions. Mix the fried eggplant with garlic.
In a separate bowl, mix 200 grams of mayonnaise and 1.5 tablespoons of vinegar 9%. Now mix everything: eggplant with garlic, fried onion and mayonnaise with vinegar. Salt a little to taste and transfer to prepared jars.
We sterilize the jars with the contents in a saucepan with boiling water for 30 minutes. Then we roll up and wrap it with a blanket until it cools completely.
