๐ This year, in addition to traditional Easter cakes, I wanted to try to cook some unusual Easter baked goods. My choice fell on the Polish Easter cake Mazurek. I cooked it and was completely delighted. Very tasty dough and incredibly tasty filling, the combination is just a bomb๐งจ.
Filling. I started cooking in advance, because I don't have homemade jam, and I don't buy such things in the store. I decided to make an orange one.
It is not difficult to cook it, I took three oranges and one lemon, washed it thoroughly and removed the zest. Peeled the fruit and cut into small cubes, added zest and 5 tablespoons of sugar. Using a blender, I chopped citrus fruits in mashed potatoes, boiled over medium heat for about 5-7 minutes.
She left the finished and cooled jam in the refrigerator overnight.
Dough. The dough in this version of the cake is shortbread with citrus notes.
Ingredients: flour - 250-300 g, sour cream - 2 tbsp. tablespoons sugar - 50 g, butter - 150 g, zest of one orange, egg - 1 pc., salt - 1 pinch
I rolled the dough into a layer 1 cm thick and cut out the base for the cake using a cutting board of a size convenient for me.
From scraps of dough I formed sides as in the photo ๐
The resulting cake was sent to the oven preheated to 180 degrees for 30 minutes.
After it has completely cooled down, you can lay out the jam in the cells. Now we need to give the cake time to soak properly, I left it overnight. You can decorate it to your taste, I used what was at home - walnuts and coconut.
The result is a very tasty cake, it doesn't have to be cooked only on Easter week...
