🖐 It's almost summer already in the yard and vegetables appeared on the markets that have the taste and aroma of real vegetables 😉. What do I cook in the summer? Most often, these are casseroles or stews in a multi-cooker in different variations, light desserts and drinks. Very soon I will share a recipe for a funky eggplant stew that my colleague brought from Italy while still a student. But today, a very simple, very tasty and light zucchini casserole with a spicy sauce, this is the kind of food I associate with summer.
I cut one or two zucchini of medium size and the same diameter into slices 1 cm thick, no more.
I cut tomatoes in the same way, as in zucchini. Three or four tomatoes will suffice. I put the pieces of vegetables in a baking dish alternating them with each other, photo 👇.
Then I start making the sauce, everything is quite simple here. In a container I mix sour cream, about 150 grams, salt (to taste), ground black pepper, 2-3 cloves of garlic squeezed through a press and finely chopped green onions.
I mix everything well and use a brush to distribute the sauce over the vegetables. I also sprinkle cheese on top sometimes, but this is not necessary.
I send it to an oven preheated to 180 degrees for 30 minutes.
This is a wonderful light dinner, to which, if you wish, you can add a piece of boiled meat or steamed fish.
Ingredients: 2 zucchini, 3-4 tomatoes, 2-3 cloves of garlic, 150 grams of sour cream or yogurt, green onions, salt and pepper to taste.
