Various appetizers and fresh vegetable salads are an integral part of the summer menu.

In one of my past publications, I shared with you a recipe for a very tasty snack made from young zucchini. This appetizer turns out to be light, spicy and cooks very quickly.

And today in our menu eggplant! I would like to suggest that you make a delicious snack from them as well as from zucchini!

In this variant eggplant will not need to be fried, and even stand at the stove at all - the oven will do everything for you! This appetizer is delicious hot, but it's even tastier when cold. Try it and see for yourself!

Cooking ingredients:

Eggplant (small) - 3-4 pcs.
Any minced meat - 500 g
Bulb onions - 1 pc.
Tomatoes (small) - 3-4 pcs.
Hard cheese - 100 g
Greens to taste
Salt, black pepper - to taste

So let's get started ...

For this dish we choose small but "dense" eggplants. We wash them, cut off the top and cut them into slices, about 1 cm thick - if you cut them too thinly, after baking the plates may fall apart. Then sprinkle with a little salt and puncture with a fork.

We prepare minced meat - I have chicken, but you can take absolutely any. Add the onion (or just finely chopped) scrolled through a meat grinder to it, put any chopped greens, salt and pepper, mix.

Next, distribute the prepared minced meat on each plate of eggplant and put it on a baking sheet covered with foil, and be sure to grease the foil a little with vegetable oil. We make the minced meat layer not too thick.

Cut the tomatoes into slices or slices and put them on top of the minced meat.

They sent the eggplants to bake in the oven preheated to 180 degrees for 30 minutes. Meanwhile, rub the cheese on a fine grater. And after 30 minutes we take out a baking sheet with eggplant from the oven and sprinkle with grated cheese. We put it back in the oven for literally 5-10 minutes.
