Throughout the summer and autumn seasons, the menu contains a wide variety of fresh vegetable dishes.

Today I want to offer you very tasty piquant eggplant appetizer. I tried such a dish just a week ago with my friends, and I can say I fell in love with it "from the first spoon"!

To prepare such a snack, you do not need to turn on the oven, and you do not have to fry the eggplants - all the preparation will take you literally 10 minutes. And if you love dishes from this vegetable, I highly recommend trying to prepare such an appetizer according to this recipe - it can be served both on a daily and on a festive table!

Cooking ingredients:

Fresh eggplants - 2-3 pcs.
Garlic - 1 small head
Vinegar - 2 tbsp. l.
Vegetable oil - 4-5 tbsp. l.
Chilli flakes - 1/2 tsp l. or any other hot pepper
Dried herbs (I have oregano) - 1/2 tsp. l.
Salt to taste
Ground black pepper - to taste
And fresh herbs to taste

Let's start cooking ...

Wash eggplants, cut off the stalk and cut into 2-3 "barrels", and then cut into cubes along the length. Do not remove the peel !!!

Now pour water into a saucepan of a suitable size, boil, salt and put chopped eggplants in boiling water.

Cook the eggplants for literally 3-4 minutes, during this time they will change color and become soft.

We take out the eggplant with a slotted spoon from the boiling water and put it in some container or any other suitable dish, and preferably in one layer so that the future dressing evenly covers all the eggplants.

And now we quickly do the gas station! Squeeze the garlic into a small bowl through a garlic press (or rub it on a fine grater), add spices, you don't need to add salt, the eggplants were already boiled in salted water. Pour in vegetable oil, vinegar and mix everything.

Cover the eggplant with the prepared dressing.

Then sprinkle with chopped fresh herbs, tighten with foil or cover with a lid and put in the refrigerator to marinate, for about 2-3 hours. It is very tasty - both as a standalone snack and as an addition to various dishes! Cook, taste, Bon appetit!
