Lagman is a Uyghur dish. that's what Wikipedia told me, but I tried it for the first time in Crimea, it is very popular among the Crimean Tatars. Loved forever! Insanely tasty and satisfying dish.
Ingredients
- 4 cups flour
- 2 eggs
- 1 glass of water
- a pinch of salt
- For gravy:
- 500 grams of boneless meat
- 2 onions
- 2 tomatoes
- 1 carrot
- 2 bell peppers
- daikon or radish
- 3 pcs potatoes
- 2 tablespoons tomato paste
- Condiments:
- turmeric,
- black pepper,
- zira,
- bay leaf, etc. to your taste,
- 2 tbsp. adjika spoons
- You can use a suitable frozen mixture of vegetables
Steps
Pour the egg mixed with water and salt into the sifted flour. Knead, put in a bag and set aside for an hour, the dough will become softer, it will be easier to work with.
Divide the dough into two parts and roll thinly until transparent, grease the table and the dough itself with vegetable oil. Sprinkle on top with plenty of flour, twist into a roll, cut.
Put the noodles on a baking sheet, roll well in flour. leave to dry.
Fry the meat in sunflower oil until crusty, add the diced vegetables, fry. Add tomato paste and spices.
Transfer to a saucepan, fill with water and simmer until the meat is half cooked. Then add the diced potatoes. Cook the potatoes until tender.
Boil the noodles, pour in the gravy, and a wonderful, hearty lagman is ready!
