Ingredients
- 1.5 kg brisket (pork)
- 1 tbsp salt
- 1 tsp black pepper
- 1.5 tsp coriander (ground)
- 1 tsp caraway seeds
- 5 tooth garlic
- 1 tbsp dijon mustard
Steps
1) 90 min. - 100 degrees
2) 60 minutes - 130 degrees
3) 20-30 minutes - 220 degrees
You can take your favorite spices, I think it will turn out just as tasty. But it is better to take sweet mustard.
Cut the skin off the brisket and prepare a marinade shaving brush from spices and garlic. We coat the meat well, rub in the shaving brush from all sides. And put it in a cool place (refrigerator) for at least 5 hours.
We roll up the brisket into a tight roll, it is better to wrap it with threads. Put in a mold or on a baking sheet, cover with foil and send to the oven.
We bake in three stages:
first - temperature 100 degrees, time 1.5 hours (under foil)
second - temperature 130 degrees, time 1 hour (under foil)
third - temperature 220 degrees, time 20-30 minutes (without foil).
