Recipe Beef jerky
Ingredients:
Beef - 2 kg, it is desirable to choose the smallest number of conductors;
salt - 1 kg;
Garlic - 3 cloves;
ground black pepper - 1 tsp;
sweet paprika - 3 teaspoons;
coriander - 1 tsp;
chilli pepper dry - half a teaspoon;
anisetree - two things;
rosemary - 2 branches;
Dried rosemary - 1 teaspoon;
wine vinegar - 1 liter.
Preparation:
Correctly choose the meat - is best suited beef, it is the most juicy and has no veins, meat is better to buy in the market or a shop in unfrozen form.
Piece should be elongated, so it will be easier to cut on the table.
Before cooking, the meat is sure to rinse and dry wipes.
Now we sprinkle generously our piece of salt and put to rest in the fridge for 2-3 days.
It is necessary that the meat gave up its moisture. After this time, pull out a piece and carefully washed.
Now prepare the brine for meat.
To this is poured into a bowl of vinegar, adding thereto grated garlic - 3 cloves, a tablespoon of salt and 2 sprigs rosemary with black pepper to taste.
The resulting brine is poured into a container, where is our meat.
Overturn every 10 minutes during one hour.
Meat should take all the flavors of our brine.
Now we proceed to the preparation of a mixture of spices.
Take paprika, black pepper, coriander, chilli, star anise - and mix in a mortar.
By and large, you can take any set of spices for meat.
Now it is very liberally sprinkle our meat with spices, if not enough it is better to do more.
Spices - this is perhaps the most important when drying meat!
Do not leave empty tracks on the meat, everything should be in spices.
Now the most important step - to wrap up our myasko in parchment paper on top and wrapped with string or a rubber band, so that the houses there.
Next, remove the meat in the refrigerator, it is better on the top shelf and wait 25-30 days, once it is ready for the new year...
