Raspberry marshmallow without boiling

  • Beat the egg whites until fluffy.
  • Add sugar in portions and beat everything together.
  • Finally, add a teaspoon of lemon juice.
  • In a saucepan, mix water and raspberry puree and add agar.
  • Prepare a parchment surface where you will plant the marshmallows.
  • Prepare piping bag and nozzle.
  • Put the puree on the stove and bring to a boil. When the agar-agar dissolves, the mass thickens.
  • Then add sugar and add glucose syrup.
  • Boil the syrup to a temperature of 103-104 ° C degrees.
  • Pour the syrup into the beaten egg whites.
  • Beat until the mixture stabilizes.

Put the mass in a pastry bag and deposit the marshmallows.

Send the marshmallows to a dry, ventilated area.

It takes a day to stabilize the marshmallow.
