Chicken pies
First, you need to figure out what kind of filling in your pies can be. I settled on chicken ventricles. Recently I just learned how to cook them.
Chicken stomachs for filling
- Rinse the stomachs and cover with cold water.
- Place on the stove and bring to a boil.
- Boil for a couple of minutes and drain the water.
- Wash the pan.
- Cover with clean cold water.
- Optionally, you can add some vegetables for taste, bay leaf and 5 allspice peas.
- Bring the second time to a boil and cook the stomachs on low heat for 4 hours. Top up with water if necessary.
Yeast dough for pies
- Dissolve the pressed yeast in warm milk.
- Add salt, sugar, egg, milk with yeast to wheat flour and mix everything.
- Add butter and oil and knead the dough into a smooth, uniform state.
- Grease a bowl with vegetable oil, round the dough and leave it for a couple of hours.
- When the dough rises, knead and refrigerate for 8-12 hours.
Chicken stomach filling
- Finely chop the boiled stomachs. Can be chopped in a meat grinder.
- Cut the onion and zucchini into small cubes.
- Fry onions in a frying pan.
- Then add the garlic, parsley and fry everything together.
- Put the zucchini, season with salt and simmer for 3 minutes on low heat.
- Put the stomachs, add sour cream, salt, black pepper.
- Mix everything and simmer until cooked and the excess liquid evaporates.
- Let the filling cool.
Meat pies
- Dust the table with flour, form a tourniquet from the dough and divide into the desired number of parts.
- Roll each piece into a ball and place on the table.
- Sprinkle the balls with flour on top and cover with foil, leave for half an hour.
- Roll out the workpiece, put the filling in the center.
- Make any seam at your discretion and mold the pie well.
- Put the pies on a prepared baking sheet.
- Leave for proofing for 30-50 minutes.
- Half an hour before baking, turn on the oven in the top-bottom mode at 180 ° C degrees.
- After proving, grease the pies with an egg and place in the oven for about 20 minutes.
