- I put wheat flour, 50 g of chopped oatmeal, a pinch of salt, sugar and the zest of one lemon into a blender.
- I mix everything together and add some frozen butter, cut into cubes.
- I mix everything into crumbs.
- I add sour cream and quickly knead the dough. I'm already mixing it with my hands on the table.
- If the dough is still cold, you can roll it out immediately. If it's warmed up, put it in the refrigerator for half an hour.
- Roll out a circle about 28 cm in diameter.
- Place the dough in a mold and prick it with a fork.
- Refrigerate for 40 minutes.
CREAM-INTERLAYER
- For a layer, you can use ricotta or soft, low-fat cottage cheese.
- I add the egg, sugar and a teaspoon of vanilla extract or vanilla sugar.
- I mix everything well.
BAKE DOUGH OR NOT?
If you like a crispy shortcrust pastry base, you can bake it. Who cares - skip this paragraph and put the apples and cream in the mold.
- Remove the dough from the refrigerator. Place a sheet of parchment on the base.
Pour beans or peas there and put in the oven preheated to 190 ° C for ten minutes.
FILLING FOR APPLE PIE
- Let the base cool down a bit while I tackle the apples.
- They need to be washed, peeled and cut into thin slices.
- For baking, it is always better to take sour or sweet and sour apples, for example Antonovka.
- It is advisable to sprinkle apples with lemon juice.
APPLE PIE ASSEMBLY
- I spread half of the cream on the base, half of the apples on top.
- Then the second half of the cream and apples again.
- Sprinkle with cinnamon sugar on top.
Putting the pie in the oven 190 ° C degrees.
After ten minutes, I lower the temperature to 180 ° C degrees.
- The approximate baking time is 40-45 minutes, you should look at the readiness of the apples and the dough.
- Allow the finished cake to cool completely, remove the ring and transfer the cake to the wire rack.
