Fish baked in salt
- I have two dorado carcasses, each weighing 500 g.
- Better to take bigger fish.
- Coarse salt or sea salt.
- For 1 kg of fish, about 1 kg of salt.
- Mix the egg white with three tablespoons of cold water.
- Stir and add to salt.
- There the lemon zest and mix everything.
You can not use egg white at all; instead, you can take 2 tbsp. water. It only serves to better hold the salt shell together.
Preheat the oven to 200 ° C degrees. The fish must be cleaned of scales and entrails.
- The gills must be cut out. The head and fins do not need to be removed.
- Place parsley with dill in the belly of each fish.
- On a baking sheet, make 2 peculiar foil plates, distribute salt over them and put the fish.
- With the remaining salt, cover all the fish on top.
- Form a salt shell.
- There should be no cracks on the shell.
Send them to a preheated oven for 30-40 minutes, depending on the size of the fish.
- Carefully remove the salt from the fish. Sometimes it is removed with the skin.
Transfer the finished fish to a plate.
