Pickled zucchini and cucumbers for the winter "Lick your fingers"

Hello friends. The harvesting season continues and I want to share with you another recipe. These are marinated zucchini and cucumbers with vegetables. It is very easy and simple to prepare. It turns out a tasty, moderately spicy preparation, which is ideal for both fish and meat dishes. Such a bright blank will decorate any table. It will also remind you of summer in winter. I hope you enjoy the recipe.

Ingredients

  • 500 grams of zucchini,
  • 500 grams of cucumbers
  • 500 grams of carrots
  • 2 pieces Sweet pepper (preferably different colors)
  • 200 grams Onion
  • 100 grams Sugar
  • 100 ml Vegetable oil
  • Parsley
  • 100 ml Vinegar 9%
  • 30 grams Salt
  • 0.5 teaspoon Ground black pepper
  • 1 tablespoon seasoning - (I used Korean carrot seasoning)

Steps

I must say right away that we will mix all the vegetables. Therefore, take larger dishes.

So:
Cut the zucchini in half lengthwise and cut out the middle with seeds from each boat.

We rub on a special grater or cut the zucchini into small strips.
Cut the cucumbers into cubes.
Grate carrots for Korean carrots.
cut the pepper into a large strip.

I used a special grater.
Cut the onion into half rings. We also need to chop the parsley.

Set aside the vegetables and
let's start preparing the marinade.
To do this, in a separate bowl, mix sugar, vinegar, oil, seasoning, pepper and salt.

Mix well so that the sugar and salt combine.
Fill the vegetables with marinade.

Now you need to mix them well. This is best done with your hands.
Leave the vegetables to marinate for 3 hours.

During this time, we will sterilize the jars and boil the lids.
3 hours passed. Our vegetables are pickled.

They are already ready to use. But we will cook them for the winter. So, we put the vegetables in jars and slightly condense. fill the jars with the released juice.
And now we need to sterilize them.

To do this, put a napkin at the bottom of the pan, put the jars and pour water to the level of the jar's hangers. We put on fire, bring water to a boil and sterilize cans for 10 minutes.

We seal the finished jars with lids and put them under the blanket to warm up. And in winter we take samples with pleasure.
